Dinner at three-star DiverXO is one of the most memorable evenings in Madrid. A 4-5 hour format, the Sticky-XO tasting with pairing. The model has to read high cuisine, hold the pace of a multi-hour tasting, follow wines at amateur level at minimum. Our base has a separate pool of models for this format — they've been to DiverXO before, they know how to hold themselves when the chef comes to the table.
